Altitude: 500 meters above sea level
Plot Name: Vinyet de Baix
Vinegrower: Josep María Cantí
Soils: Clayey silt and limestone
Yield: 6,500 kg/ha

HARVEST
Organically grown grapes destined for the production of this
wine are hand-harvested in crates, exclusively from the Vinyet
de Baix plot. Cluster selection is carried out directly on the
vine. A week later, a second pass is made to collect the stems
and add them to the winemaking process.

WINEMAKING
The grapes are carefully selected and undergo skin maceration
during fermentation to achieve good aroma extraction. 10%
of the grapes are vinified using carbonic maceration, a
traditional technique that allows for the extraction of the
grape’s primary aromas. Fermentation occurs with indigenous
yeasts and minimal sulfur addition. The inclusion of stems
in the fermentation, when the wood maturity is optimal,
helps achieve faster and more complete natural fermentations,
providing better color stability and aging potential.

TASTING NOTES
A complex white wine with character and personality. Saline
and highly mineral with floral notes (magnolia), stone fruit
aromas and hints of ginger. Broad on the palate, with a dense
and firm texture.

Food Pairing
Perfect for flavorful dishes such as smoked fish and poultry
or grilled seafood. It pairs well with dishes seasoned with
sweet spices (clove, nutmeg) or mushrooms.
