VINEYARDS AND SOILS
All the grapes come from the foothills of Montserrat, in the municipality of Masquefa. The Riesling grapes come from 17-year-old vines located in the Cal Bartomeu plot, characterized by clayey and compact soils. These soils are low in organic content, have very fine mineral particles, and contain stones. The yields are extraordinarily low, at 3,000 kg per hectare. The Macabeo grapes come from two parcels located in the same estate, surrounded by forest. Sota l’Hotel has very low yields (4,500 kg/ha). The soils have a significant presence of clay with some sandy areas. Sota Vía is a 34-year-old vineyard with shallow, calcareous soils and loamy clay texture.

HARVEST
The organically grown grapes used for this wine are hand-picked in boxes with impeccable health, collecting each variety at its optimal moment.

WINEMAKING
The grapes are gently pressed without maceration. A light settling follows. Fermentation occurs spontaneously at low temperatures in stainless steel tanks and lasts for around three weeks. The wine is bottled before completing alcoholic fermentation, allowing it to finish in the bottle, where it rests horizontally for two months.

TASTING NOTES
A fresh, pleasant, and crisp sparkling wine. Expressive on the nose, filled with aromas of white fruits (pear, green apple), stone fruits (apricot), herbal notes (forest), and subtle aniseed notes. On the palate, it has a gentle effervescence and a good acidity. It evokes flavors of lemon and honey candy with balsamic hints.
